Vanaf 1 januari 2005 moet in Nederland de herkomst van alle levensmiddelen achterhaald kunnen worden. De voorschriften over deze traceerbaarheid staan in de Europese ‘General Food Law’ (GFL). Kort samengevat houdt de GFL het volgende in: per 2005 moeten levensmiddelen in alle stadia van productie (productie, verwerking, distributie) traceerbaar zijn. In elke schakel wordt bijgehouden waar de grondstoffen vandaan komen, waarin ze worden verwerkt en waar het eindproduct zich bevindt.
